You don't see too many butterfly cut chicken breast in your local grocery anymore. We cut them this way to ensure equal servings and consistent cooking times. Our chickens are Alberta raised (and hold a Canadian passport) and are grain-fed. These are perfectly sized restaurant-sized 6oz portions.
